International Cooking: Africa Part 1


Kofta

Ingredients:
½  lb lean ground beef
½ yellow onion
1 T fresh garlic
1 egg yolk
2 T fresh oregano
salt and pepper
3 bamboo skewers (soak in water for 20 minutes before starting recipe)

Directions:
     
            Turn grill on medium heat. Slice up onion and oregano and place in a medium mixing bowl. Add the ground beef, egg yolk, garlic, salt and pepper. Mix all ingredients together until they are well incorporated. Separate the meat into three balls. Roll one ball at a time onto a skewer, forming into two meatballs on the stick. Repeat with all the meat. Place on grill for five minutes on each side. Serve hot and enjoy!

Plantain Fritters

Ingredients:

1 c flour
2 T maple syrup
2 t baking powder
1/4 t salt
1 plantain
1/2 cup soymilk
1 egg
1 T canola oil
½ c powdered sugar
Oil for frying

Directions:

            In a medium size bowl, add the flour, maple syrup, baking powder and salt. Stir to mix all ingredients. Set aside. Peel the plantain (watch video for full instructions) and cut into small chunks. Add to a food processor with the soymilk, egg and canola oil. Allow the liquid to blend into a smooth mixture.

            Remove the plantain mixture and add to the bowl with the flour mixture. Mix the ingredients together, resembling a thick biscuit like batter. Heat about 1 ½ inches of oil in a deep frying pan on medium heat. When hot, add a large spoonful of batter into the oil. Allow the fritter to brown on both sides, about a minute on each side. Remove from heat, place on paper towel to dry.

            When ready to serve, sprinkle with powder sugar and enjoy!



Baked Bourek (Ground Beef in Phyllo)

Ingredients: 


1 Egg

¼ yellow onion

1 T fresh parsley

½ lb Ground beef 

2 Phyllo sheets 
salt and pepper

½ lemon 
2 T Canola Oil

Directions:
           
             Slice up the onion and parsley. In a medium saucepan, heat the oil on medium heat. Add the chopped onion and allow to brown. Add the ground beef salt, pepper and parsley, letting the ground beef fully cook. Add the egg, stirring so it fries evenly in the mixture. Remove from heat and allow to cool.
           
            Heat oven to 375. Layer two Phyllo sheets on top of each other. Layer the meat mixture across the short end of the sheet. Roll up and tuck in the ends. Place on cooking sheet and put into oven. Bake for ten minutes or golden brown. Remove from heat, cut into bite size pieces, and squeeze lemon on top before eating. Enjoy!
