International Cooking: North America Part 1



Mexican Meatloaf


Ingredients:
1 lb ground turkey
1 can tomato soup
3 T water
2 T fresh oregano
1 t cumin
1 egg
1/2 red onion
2 t garlic
1/4 jalapeno
1/2 Anaheim pepper
1/2 c bread crumbs






Directions:


Preheat oven to 350.


In a large bowl, combine the tomato soup, water, oregano, and cumin. Cut up the oregano, red onion garlic, jalapeno, and Anaheim pepper. Place the ground turkey in a bowl with the cut up herbs and vegetables, bread crumbs, egg and 1/2 cup of tomato soup mixture. Mix the ingredients well and place in a loaf pan. Pour the remaining soup mixture over the top, and cook for 1 hour. Enjoy!

Spicy Shrimp with Jamaican Fruit Salsa


Ingredients:
1/2 lb shrimp
1 t cayenne pepper
1 t chili powder
1/2 t red pepper flakes
1/2 c pineapple
1/2 c papaya
1/2 c mango
1/2 red onion
1 fresh lime
1 T olive oil
1 t sea salt
1 T fresh mint
Lettuce

Directions:


In a saucepan, heat with a drizzle of olive oil. In a bowl, toss the shrimp with the cayenne, chili powder, and red pepper flakes. Place the shrimp into the saucepan, and cook. Put the shrimp into the refrigerator to cool. Meanwhile, chop up the pineapple, papaya, mango and red onion. Place into bowl. Add the juice of the lime, olive oil, sea salt, and chopped fresh mint. Allow the fruit mixture to cool in fridge for thirty minutes.

When ready to eat, chop up the lettuce in a large bowl. Add the fruit mixture, and toss with the lettuce. Add the shrimp and enjoy!
