Monday Night Meals: Week 13

New York Giants VS. Washington Redskins


Matzo Balls

Ingredients:



3 eggs
¾ c matzo meal
salt and pepper
4 c chicken broth
water

Directions:
           
            In two medium mixing bowls, separate the yolks and whites of the eggs. Using a mixer, beat the egg whites until stiff peaks form. Beat the egg yolks until they are thick and light yellow. Gently fold the yolks into the whites. Add the matzo meal to the eggs, and gently fold in. Place into refrigerator for at least twenty minutes.

            Fill a medium pot with water, add around a teaspoon of salt to water and bring to a boil. Wet hands with water, separate the matzo in half, separate the two, then separate the four, ending with eight balls. With wet hands, gently roll the dough into balls. Drop all the balls into boiling water. Allow the balls to boil for fifteen to twenty minutes; the balls will be floating and look fluffy.

            Meanwhile, place the chicken broth in a medium pot and bring to a simmer. When the matzo balls look fluffy, place the matzo balls into the chicken broth. Allow the balls to cook in broth for five to seven minutes. Remove from liquid, sprinkle with salt and pepper. Enjoy! Go Giants!


Broiled Trout

Ingredients:

2 cloves garlic
1 lb. trout
2 sprigs rosemary
1 lemon
salt and pepper
olive oil

Directions:

            Begin by wrapping a baking sheet with foil, brush with olive oil. Turn on broiler to a medium setting. Clean up trout and place skin down on foil. Coarsely chop the garlic and rosemary. Sprinkle the trout with salt and pepper, then garlic and rosemary, covering the top of the trout. Zest the lemon and place on top of trout. Cut open lemon, using half of it, squeeze around the trout.

            Place the fish into the top wrack for five minutes, watching incase of browning. Place on lower wrack for another two to four minutes, allowing the fish to become flaky. Remove from oven and enjoy. Go Redskins!
