Monday Night Meals: Week 16



Detroit Lions Vs. Atlanta Falcons


Ham Hocks and Beans

Ingredients:

2 Ham Hocks
½ Bag 15 bean mix
2 Bay leaves
1 T oregano
1 T garlic, minced
½ T pepper
½ white onion, diced
salt
water

Directions:

            In a crock pot, add the ham hocks, bean mix, bay leaves, oregano, garlic, pepper and onion. Add a small amount of salt, since the ham hocks are already salty. Add water until the ham hocks are fully emerged. Place the crock pot on low heat; allow to cook for five to six hours.

            Remove the ham hocks, cut off all pieces of meat. Shred the meat and place back into the bean mixture. Serve immediately. Enjoy, Go Falcons!

Potato Noodles “Kopytko”

Ingredients:

3 russet potatoes
1 egg
1 c flour
salt and pepper



Directions:
 
           Cut the potatoes in small chunks. Bring a large pot of water to a boil, add the potatoes. Boil until they are soften, about ten minutes. Drain the potatoes and place in a bowl. Using a mixer beat the potatoes with egg and a small amount of salt until smooth. Place into refrigerator, allow to chill.

            Bring out the potato mixture, and slowly add the flour until the mixture resembles dough. You do not want it to be sticky, so be sure to add enough flour. Divide the mixture into three balls. Slowly roll out each into long logs. Cut into one-inch chunks.



            Bring a pot of lightly salted water to a boil. Add the potato noodles to the mixture, allowing to float to top and fully cook, about ten minutes. Remove from water and drain on a towel. Sprinkle with salt and pepper and enjoy. You can serve with breakfast or bacon gravy. Enjoy, Go Lions!
