Monday Night Meals: Week 7

New York Giants VS. Minnesota Vikings


New York Giants

Spiedies

Ingredients:

1 lb beef strips
1 c white wine
1 t oregano
½ lemon
1 t garlic powder
1 t onion salt
1 -2 Bay leaves
4-5 basil leaves
1 t thyme
Salt and pepper
½ c vegetable oil
2 french rolls
4-5 wooden skewers

Directions:

                Place the beef strips in a deep dish for marinating. Add the spices; oregano, garlic powder, onion salt, bay leaves, basil leaves, thyme, salt and pepper. Cut the half of lemon into three pieces, squeeze over beef and place remaining pieces in dish. Pour the wine and oil over top of beef; turn each strip a couple of times. Place into refrigerator overnight.

                When beef is down marinating, soak the wooden skewers in water to prevent them from lighting on fire. Cut the beef into cubes, about ½ inch thick. Place all the beef on the skewers, leaving an inch on both sides. Heat barbeque to medium heat. Grill the beef skewers to preferred doneness, we like medium-rare so we cook each side about 2-3 minutes on each side.

                Cut in half and place French rolls on the barbeque, allowing them to toast, about 1 minutes. Remove rolls and skewers from barbeque, use bun to remove beef from skewer and enjoy. GO GIANTS!

Minnesota Vikings

Hot Dish- Rice and Mushroom

Ingredients:

8-10 crimini mushrooms
½ white onion
½ c milk
2 T butter
¼ c flour
¼ c beer
¼ c balsamic vinegar
2 T garlic
2 c uncooked rice
4 c water
Salt and pepper
French onions

Directions:

To begin, bring water to boil, add rice and lower heat. Allow rice to fully cook, about twenty minutes. Meanwhile, slice up onion, mushrooms, and garlic. Add butter to a saucepan on medium heat, allow to melt. Add the mushrooms, onion, garlic, salt and pepper to pan, sauté and cook down 2-3 minutes.


                Preheat oven to 350 F. Add the flour to the mushroom mixture and stir well. Add the balsamic vinegar, beer and milk to the mushroom mixture; allow to thicken on medium-low heat, about five minutes. Add the mushroom mixture to the cooked rice and mix well. Add to casserole dish and spread out evenly. Top with French onions over entire dish, place on bottom rack of oven and bake for 25-30 minutes. Enjoy, GO VIKINGS!
