Monday Night Meals: Week 9


Chicago Bears VS Green Bay Packers

Jibarito

Ingredients:


 
2 plantains
2 slices swiss cheese
¼ lb. sliced roast beef
2 T mayonnaise
dash of chili powder
dash of cumin
dash of garlic powder
1 roma tomato
romaine lettuce
2 slices of white onion
vegetable oil

Directions:

            Begin by heating a saucepan and drizzle with oil. Cut open plantains, slice lengthwise and in half. Place plantains in the heated oil, and fry until golden brown on each side, about two minutes. Place two plantains overlapping each other on a plate, place another plate on top, and smash the plantains. You want the two plantains to smash together. Repeat with remaining plantains.

            Place the plantains back into heated oil, frying each side until crispy and fully cooked, about five minutes. Remove from heat and allow to dry. Meanwhile, in a mixing bowl add the mayonnaise, cumin, chili powder and garlic powder, mix well together.

            Add the roast beef to a heated pan, allow to warm and slightly brown, flip, add cheese on top of beef and cover until melted. Prepare sandwich by smearing one side with mayonnaise, roast beef, cheese, slices of tomato, onion and lettuce. Makes two sandwiches, keep together with toothpicks if needed. Enjoy, Go Bears!

Green Bay

Cheddar Cheese Potato Salad

Ingredients:

8 red potatoes
1/2 c cheddar cheese (cut into cubes)
1 c mayonnaise
2 T yellow mustard
2 eggs
salt and pepper
green onions (optional)

Directions:

            Bring a large pot of water to boil. Cut potatoes into quarters; add the potatoes and eggs to the boiling water and lower heat. Allow to boil until potatoes are tender, about ten minutes (test with fork if not sure). Drain the eggs and potatoes, place eggs into cold water. Place potatoes in the refrigerator to cool.
           
            Peel the eggs and cut into small pieces, add to a large bowl. Add the cooled potatoes, mayonnaise and mustard. Stir all the ingredients in the bowl, add the cheddar cheese chunks, salt and pepper to taste. Add green onions if you desire. Mix all together and enjoy! Go PACK Go!
