Mostaciolli
Ingredients:
16 oz mostaciolli noodles
12 oz tomato sauce
½ lb ground turkey
¼ c onion
4 mushrooms
5 fresh basil leaves
2 T garlic
8 oz Parmesan
8 oz mozzarella
salt and pepper
olive oil
Directions:
Slice
up the mushrooms, onions, garlic and basil. Heat a saucepan with olive oil, and
add the mushrooms, onions, and basil. Meanwhile, bring a large pot of water to
boil. Add salt and mostaciolli noodles.
When
the onions became translucent, add the ground turkey, salt and pepper. When
noodles are cooked, set drain and set aside. When the ground turkey is cooked,
add the tomato sauce and allow to heat up. Shred the cheeses.
Preheat
the oven to 350. Take the large pot the noodles were cooked in, and add the
meat and sauce mixture to it. Add the noodles to the pot, and mix well. In a
large baking dish, place half the noodles. Add the mozzarella across the
noodles, and add the remaining noodles. Add the Parmesan on top, and add to the
oven. Allow to bake 15 minutes, or until it is melted and brown on top. Enjoy.

Tiramisu
Ingredients:
Lady Fingers (see below or 1 package)
6 egg yolks
1 1/3 c sugar
1 c mascarpone cheese
1 c coffee (strong)
2 T rum (or extract)
1 ¾ c whipping cream
chocolate shavings
cocoa powder
Directions:
With
a double boiler, place the yolks and sugar, and beat until thick and smooth.
Remove from heat and add the mascarpone. Mix until smooth.
Place
the whipping cream in a bowl and mix until still peaks form. Mix the whipping
cream with the yolk mixture, and blend well. In a small bowl, mix the rum and
coffee.
In
a spring formed pan, place the ladyfingers across the bottom. Brush the
ladyfingers with the coffee. Spread half of the whip cream across the
ladyfingers until well covered. Repeat. With a sifter, place the cocoa powder
across the top, as well as chocolate shavings. Place in freezer for at least
one hour to form, remove, slice and enjoy.
Lady Fingers
Ingredients:
½ c flour (sifted)
3 eggs
2 T sugar
½ t vanilla
¼ t cream of tartar
Directions:
Separate
egg whites and yolks in medium mixing bowl. Add the sugar with the yolks, and
beat with a mixture. Mix the yolks until they become thick and pale, about five
minutes. Add the vanilla and gently mix. Add the flour over the yolk mixture,
and allow the yolks to absorb the flour, do not mix.
With
a mixture, beat the egg whites until they become white and foamy. Add the cream
of tartar to the eggs, and beat until they formed peaks. Gently fold the egg
whites into the yolk mixture.
Heat
oven to 350. Place a large tip on a pastry bag, and fill the egg mixture into
the bag. Squeeze the ladyfingers on a nonstick baking sheet, leaving about 1
inch of space between each cookie. Bake for 8 minutes, and remove instantly
from pan onto cooling rack or plate. Go Seahawks!
