Monday Night Meals


NFL Recipes                     




Cioppino

Ingredients:

3 T butter
1 onion
3 T garlic
1 T parsley
2-3 large tomatoes
1 ½ c chicken broth
1 bay leaves
½ t thyme
½ t oregano
salt and pepper
1 c water
2 c white wine
1 lb shrimp
1 lb crab legs
1 lb clams

Directions:

            In a large pot, add the butter and allow to melt. Chop the onion, garlic, and tomatoes. Add the onions and garlic to the pot; allow to cook around five minutes. Add the tomatoes, and allow the vegetables to stew, around ten minutes.

            When the vegetables are ready, add the chicken broth, water and wine, stir well. Add the bay leaf, oregano, thyme, salt and pepper. Allow to simmer thirty minutes.

            Add the shrimp, crab legs, and clams. Allow to boil, and then bring back to a simmer. Let cook for five minutes, or until the clams are all open. Enjoy the yummy seafood, go 49ers.

Primanti Brothers Sandwich

Ingredients:

Loaf of sourdough bread
1 lb capicola ham
½ lb provolone cheese
1 tomato (cut into slices)

French Fries

Coleslaw

1 lb cabbage
½ c sugar
¼ t celery seed
1/3 c apple cider vinegar
¼ c vegetable oil
salt and pepper

Directions:

            Start by making the coleslaw. Slice up the cabbage, being sure to cut out the centerpiece. Add in the sugar, celery seed, apple cider vinegar, vegetable oil, salt and pepper. Mix well together, let sit for at least twenty minutes.

            Have the French fries baked and set aside. Slice the French bread loaf and tomatoes. In a pan, place the ham and cheese, and allow to melt. Stack the sandwich, start with the bread, tomato, meat and cheese, coleslaw, and French fries. Eat and enjoy! Go Steelers!
