Chicken Nuggets
Ingredients:
2 large chicken
breast
3 t olive oil (plus
some for pan)
½ c breadcrumbs
2 T grated parmesan
cheese
Directions:
Preheat
oven to 425. Cut the chicken breast into nugget size pieces, about 1 inch in
size. Grab two bowls; in one bowl add the olive oil. In the other bowl add the
breadcrumbs and parmesan cheese and mix well. Add the dash of olive oil to a
baking sheet and spread evenly to coat.
Place
the chicken pieces into the olive oil and then into the breadcrumb mixture.
Cover both sides of the chicken and place onto pan, repeat with all the pieces.
Place
into heated oven, baking each side 6-8 minutes. Enjoy. Serve with a healthy
side dish such as a fresh garden salad.
To
mix it up, you can always add some powdered or fresh herbs to the breadcrumb
mixture.
