Fast Food Challenge: Breakfast Sandwiches

Breakfast Sandwich

Ingredients:

1 egg
1 ½ strips of bacon
1 avocado
2 slices of bread
1 roma tomato
¼ c spinach
olive oil

Directions:

            In a frying pan, turn on medium heat and add a dash of olive oil. Add the bacon in the pan, and allow to crisp on both sides. Remove from heat and place on paper towels to let the oils drain. Remove most of the bacon fat in the pan, leaving about a tablespoon in the pan. Place back on medium heat, and when hot add the egg. Cook the egg to your favorite fried egg style.
           
            Meanwhile slice the tomato and avocado. Toast the bread as well. Layer the sandwich, adding the egg, avocado, tomato, spinach and bacon. Enjoy!

Breakfast Bagel

Ingredients:

¼ c onion
¼ c bell pepper
1 egg
1 whole wheat thin bagel
1 T garlic
¼ c spinach
2 mushrooms
1 avocado
olive oil

Directions:

            In a frying pan, add a small amount of olive oil and turn on medium heat. Slice up the onion and add to the heated oil. When the onion is beginning to slightly brown, slice the bell pepper and add to the pan. Stir well, cut up the mushrooms and add to the pan with the garlic.

            When the vegetables are cooked, about five minutes, cut up the spinach and toss in the pan. Beat the eggs and add in the pan, do not stir Allow the egg and vegetables to form together, and flip to cook the other side.

            Cut up the avocado, and toast the bagel. Add the cooked egg mixture to the bagel, and place avocado on top. Enjoy!
