Soft Taco Turkey Supreme

Yields 5 tacos

Ingredients:

½ lb lean ground turkey (99%)
3 roma tomatoes
¼ red onion
½ lime
1 jalapeno
3 T garlic
½ t basil
½ t red pepper flakes
1 t coriander
1 t chili pepper
½ t cayenne
3 T Greek yogurt
1 c lettuce and spinach mix
2 T olive oil
salt and pepper
5 Whole-grain tortillas

Directions:

            In a large saucepan, place the olive oil in pan on medium heat. When hot, add the ground turkey, basil, red pepper flakes, coriander, ½ teaspoon chili pepper, and 1-Tablespoon garlic. Add salt and pepper to taste. Cook until turkey is browned and cooked throughout, about seven minutes.

            Salsa: Version of Pico de Gallo.
           
            In a medium bowl, chop up the tomatoes, removing the seeded centers. Diced up the red onion and jalapeno, and add to bowl (hint: if you want to mellow it out, remove the seeds from the jalapeno). Squeeze a quarter of the lime over the mixture, and add 1-Tablespoon garlic, salt and pepper.

            Supreme Sauce

            In a small bowl, scoop the Greek yogurt and squeeze the other half of the lime. Add the remaining ½ t chili powder, 1-Tablespoon garlic and cayenne. Mix all together.

            The tortillas we purchase are naturally soft, and do not need to heat, but some need a bit of steam and a flash of the microwave to avoid cracking. Place the tortillas together; add the ground turkey, supreme sauce, lettuce mixture and then Pico de Gallo. Enjoy.

Bonus: you should have enough Pico de Gallo to enjoy with chips throughout the week!
