Monday Night Meals: Week 1

Oakland Raiders vs. San Diego Chargers




Street Tacos

Ingredients:

1 lb. steak (thin cut or tenderized)
1 c red leaf lettuce
½ c crumbled queso fresco
1 lime
1 T olive oil
pepper
Corn tortillas

Marinade:

1 T minced garlic
½ c cilantro
1 lime
1 orange
¼ c olive oil
2 spicy chili peppers
1 T white vinegar
salt and pepper

Pico de Gallo

4 roma tomatoes
½ red onion
2 green onions
2 serrano or spicy pepper
2 limes
2 T minced garlic
¼ t cumin
½ red bell pepper
salt and pepper

Directions:

            To begin prepare the marinade. Coarsely chop the cilantro and place into a food processor. Add the garlic and mix. Add the peppers, juice of the lime and orange (set aside remaining fruit) salt and pepper. Mix, and emulsify the white vinegar. Place meat into a one-inch container and pour marinade over. Place the squeezed citrus on the sides, wrap with plastic and refrigerate. Chill for 1-4 hours.

            Meanwhile, prepare the pico de gallo. Dice up the tomatoes, onions, peppers and garlic. Place into bowl. Squeeze the lime juice into bowl. Add the cumin, salt and pepper. Refrigerate.
            Before you pull out meat to cook, prep the sides. Cut the lime into wedges, cut up lettuce, and crumble the cheese. Heat grill to medium heat. Sear the meat on both sides, cooking to desired cut (we do medium rare). Allow the meat to rest. Throw on tortillas onto grill to warm on each side. Prepare your tacos and enjoy. Macaroni & Cheese

Ingredients:

2 c whole milk
¼ c butter
¼ c flour
salt and pepper
½ lb macaroni
3 c sharp cheddar cheese
1 c  romano cheese
breadcrumbs

Directions:

            Bring a large pot of water with salt to boil for pasta. In a saucepan, turn on medium heat. Add the butter to pan, and fully melt. Add the flour to mixture, allow to get to a caramel brown. Slowly add the milk to flour mixture, whisking the whole time (mixture will bubble and thicken). Whisk until smooth, lower heat and allow to thicken.
            When macaroni is aldente, remove from heat and drain. Shred the cheeses. Add the cheeses to the milk mixture, completely melting the cheese, remove from heat. Add salt and pepper. Preheat oven to 400. Mix the noodles with the cheese sauce and add to a baking dish. Spread breadcrumbs over the top of the noodles. Bake in oven for twenty minutes, or when the crust is a nice golden brown. GO RAIDERS!
