Monday Night Meals: Week 3

Green Bay Packers vs Seattle Seahawks




Wisconsin Beer Brats

Ingredients:

3 bratwurst
3 hoagie rolls
½ onion
1 16 ounce Wisconsin Beer
½ c cheddar cheese
ketchup
mustard
relish

Directions:

            In a medium pot, place the sausage, wedge of onion and beer. Allow the beer to come to a boil, until the sausages are fully cooked. Meanwhile shred the cheddar cheese and preheat the oven or toaster oven to 350. When sausages are finished cooking, remove from the beer. Slice a long slit along the sausage, place into a hoagie roll, and place the cheese in slit of the sausage. Wrap the hoagie in foil and place in the oven. Bake for five minutes. Place on favorite condiments, GO PACK GO!

Potato Leek Soup

 4 leeks
2 T butter
4 yukon potatoes
1 quart vegetable broth
1 c heavy cream
1 c milk
1 T white vinegar
salt and pepper

Directions:

            Slice the tops and bottoms of leeks, slicing into small segments. In a large pot, add the butter, leeks and a pinch of salt. Allow the leeks to cook, for five minutes. Meanwhile, cut up the potatoes into small chunks. Add the potatoes to the leeks with the vegetable broth to the pot and bring to a boil. Reduce heat to medium-low, cover and cook for thirty to forty minutes, or until potatoes are soft.

            Place entire pot mixture into the blender, mix until everything is well incorporated. Add the blended mixture back to the pot, add the heavy cream, milk, white vinegar, salt and pepper. Place on heat if you desire to have warm or place into bowl and chill for cold soup. Go Seahawks!
