Homemade Vanilla Ice Cream
Makes 8 Servings
Ingredients:
5 egg yolks
¾ c sugar
½ c water
1-pint heavy whipping cream
Directions:
Place the egg yolks in a bowl and whip until light and fluffy. Meanwhile, place the sugar and water in a pot on low heat. Allow the sugar to dissolve, and bring to a boil. When the sugar water is ready, temper to the yolk mixture, meaning add the hot liquid a small amount at a time, cooking the eggs but not scrambling them.
In a separate bowl, beat the whipping cream until it is thick but not able to hold a peak. Fold the whipping cream with the egg mixture and place into the freezer uncovered. When cold and frozen, serve enjoy, and place lid on bowl.
Healthier Oreo Blizzard
Makes One Serving
Ingredients:
2 Newman O’s
1 c homemade ice cream
Directions:
Crush
the cookies in a plastic bag with a mallet until smashed. Allow the ice cream
to soften in a bowl. Add the cookies to the bowl, and fold into the ice cream.
Place into cups and enjoy.
Smoothie
Makes 2 Servings
Ingredients:
1 Banana
3 T yogurt
¼ c superfood juice (Odwalla)
¾ c orange juice
½ c peaches
½ c blackberries
Directions:
Get out your blender, and place on counter. First peel and add the banana, I usually break it in half. Next add the yogurt and frozen fruit. Lastly, add the juices, this way it all mixes without having to stir. Mix until well incorporated, about thirty seconds. Serve for breakfast, lunch, or even dessert. Enjoy!
